Slippery elm is a species of elm tree native to eastern North America. It is called “slippery” because the inner pith of its bark contains a high degree of mucilage. On contact with water, slippery elm powder becomes mucilaginous (slimey, gel-like) in texture. For this reason, powdered slippery elm bark is a popular ingredient in salves, ointments and other topical skin. Slippery Elm Bark Powder makes an excellent flour extender and can be used in a variety of recipes. Some writers claim that it has a food value equal to that of oatmeal.
